This weekend we had the opportunity to taste a new wine and had the pleasure of pairing it with a delectable entree from Sheridan’s in Cudahy.  The dish that delighted our palette on that particular evening was a cornmeal encrusted cod served over soba noodles with asparagus, mushrooms, and cherry tomatoes.  It was topped with chunks of fresh mozzarella cheese and finished with a pinch of rice noodles.  Our wine pairing that evening was the 2007 Concannon Chardonnay from Concannon Vineyards.

Having seen a recent abundance of buttery or oakey chardonnays, we were surprised by the unique combination of flavors in this one.  The nose brought on bright citrus tones with a little vanilla and light flowers at which point I was already itching to discover more about this wine.  As we tasted it started with a very light acidity and ample fruit but led to a smooth finish with light apple and almond flavors with hints of oak and ash. It was pleasant to drink and surprised us even more when we took a sip to compliment a bite of the cod.

The earthy flavors of the dish were complimented by the flavorful first impressions of the wine as it smoothly cut through the robust flavors of the dish.  It delighted even further when the smooth finish of the chardonnay lifted the flavors off our tongues and helped prime our palettes for the next bite of the cod dish.  The best way to describe the pairing was a savory explosion followed by a refreshing rush.  It was a wine that certainly left a good impression on all of us, and we were grateful to be guests at Sheridan’s.  Stop in to Kafevino this week to see what we have to offer and to taste the Concannon Chardonnay and other fine wines.
